Ingredients:

  • 2 cups hung curd (strained yogurt)
  • 1/2 cup crumbled paneer (Indian cottage cheese)
  • 2 tablespoons gram flour (besan)
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped coriander leaves
  • 1/4 cup finely chopped mint leaves
  • 1-2 green chilies, finely chopped (adjust to your spice preference)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • Salt to taste
  • Oil for shallow frying
  • Bread crumbs (for coating)

Instructions:

  • Start by preparing hung curd. To make hung curd, tie regular yogurt in a muslin cloth or a clean kitchen towel and hang it over a bowl. Let it drain for a few hours, or overnight, in the refrigerator. You should be left with thick, creamy hung curd.
  • In a mixing bowl, combine the hung curd, crumbled paneer, gram flour, finely chopped onions, coriander leaves, mint leaves, green chilies, ginger-garlic paste, cumin powder, garam masala, red chili powder, and salt. Mix everything well to form a smooth and uniform mixture.
  • Divide the mixture into small portions and shape them into flat, round kababs. You can make them as big or as small as you prefer.
  • Roll the kababs in bread crumbs to coat them evenly. This helps in giving a crispy texture when you fry them.
