Paneer Kathi roll

 Paneer Kathi roll/vegetarian wraps with cheese is a popular street food in India.

Kathi roll is also known as Frankies

What we need for

 

1 cup paneer cut into small cube
2 medium size tomato sliced
1 small onion sliced
2 small capsicum sliced
1 tablespoon fresh coriander chopped
onion-carrot chopped into thin slice(optional)
mint coriander chutney  see recipe chutney recipes
For marination
½ cup curd/yogurt
½ teaspoon ginger garlic paste
1 teaspoon red chilli powder
½ teaspoon garam flour/besan
Salt to taste

For masala
1 teaspoon coriander seeds.1/2 teaspoon cumin seeds,1 whole red chilli. 

How to make Chapati

For chapatis —
 1 cup whole wheat flour
½ cup maida/all-purpose flour
½ cup milk
Salt and pepper
In a mixing bowl combine all above ingredient and make a soft dough. You can add little more milk if needed.
Divide dough into  4-5 equal part and roll into a thin roti. Heat pan on high heat and cook rolled chapatis both side lightly brown spot appear.you can make in large measure and keep in the fridge.

 

Assembling kathi Roll  
Dry roast coriander seeds, cumin seeds and whole red chili cool and grind.Make a coarse powder.
In a bowl, mix paneer, curd, besan, red chilli, salt, ginger garlic paste mix well keep for 15 minutes.

Heat oil in a pan, add onion and sauté until onion change, colour then, add capsicum cook for 2 more minutes, add paneer and sauté for 1 minute, add tomato and capsicum add roasted powdered spices chopped coriander stir and cook on high heat 3-4 minute.

Assembling Kathi roll

Heat tawa on medium heat spread 1 teaspoon oil/butter heat roti both side simmer and spread mint coriander chutney evenly, place paneer mixture lengthwise and spread some onion-carrot mixture and roll roti tightly.

Make all rolls.
Heat flat pan/tawa with little butter and cook roll until warm and crisp serve hot with chutney and cabbage salad.

 Paneer Kathi roll is good for lunch box or evening snacks…

Note-

chapatis can be made in advanc…and keep in box.

Instructions
