Gajar ka halwa / Indian Carrot Halwa Easy Recipe

Winter Special (Gajar ka halwa)

 

Gajar ka Halwa is a well-known dessert in the winter. Especially in the Northern part of India. Usually, Gajar ka Halwa is  Traditionally, there is a concept using Khoya or condensed milk. I prefer to make the traditional way.
I like to use red carrots as it gives a nice color to the dish. Gajar ka Halwa can be preserved for 10 days in the fridge.
Jut warm before serving That means we always have sweet at home.

What we Need:
½ kg carrot
2 tablespoon ghee
6-7 cashew nut/ kaju
¼ teaspoon cardamom powder
½ liter milk
How to make
First, wash and peel the carrot. Then grate the carrot or you can use a chopper as I use to do it for quick work. In a heavy Pan add 2 tablespoons of ghee when ghee is hot, add cashew nuts and roast for a few seconds then add grated carrot and sauté 4-5 minutes at medium heat now add sugar and sauté until sugar is melted. Now add milk and mix, cook this mixture on medium heat. After some time, the milk will start boiling and then start reducing. Keep stirring and scraping the side of the pan. Cook until mixture reduced 80%. Reduce heat Add cardamom powder and mix well. Simmer the heat and cook until completely dry stir at intervals to avoid burning. You will see it will leave the side. Serve hot you can garnish with chopped dry fruits.
Note:
While buying carrots do not buy hard and fibrous carrots it will not give you desired result.
Buy tender and juice carrot. The sugar you can take as per your taste
