Ingredients
  

  • 10-12 dried red chilies adjust to your spice preference
  • - 4 cloves of garlic
  • - 1-inch piece of ginger peeled
  • - 1 tablespoon vinegar
  • - 1/2 teaspoon sugar
  • - Salt to taste
  • - Water as needed

Instructions
 

  • Soak the Dried Chilies: Start by soaking the dried red chilies in warm water for about 20-30 minutes or until they become soft and pliable.
  • Prepare the Chilies: After soaking, remove the stems and seeds from the chilies if you want the chutney to be less spicy. Leaving some seeds will make it spicier.
  • Blend Ingredients: In a blender or food processor, add the soaked chilies, garlic cloves, peeled ginger, vinegar, sugar, and a pinch of salt. Blend until you get a smooth paste. If the chutney is too thick, you can add a little water to achieve the desired consistency.
  • Adjust Seasoning: Taste the chutney and adjust the salt, sugar, and vinegar according to your preference. You can make it more tangy with extra vinegar or balance the heat with a bit more sugar.
  • Store: Transfer the red chutney to an airtight container and store it in the refrigerator. It can last for several weeks when refrigerated.
  • Serve: This red chutney is an excellent accompaniment for momos, dumplings, or other snacks. Serve it on the side and enjoy the spicy kick!
