Garlic and Raw Mango Pickle

India has very rich and flavorful cuisine and culture. Pickel has very imported roll in Indian food.  Pickles are made from the variety of fruits and vegetables. This is mango season I decided to make something different type of pickle. Grated mango and garlic pickle are not very common, I got this recipe from my mom she makes very delicious pickles.

 

 INGREDIENTS:

  • 1 kg raw mango
  • 250-gram garlic
  • 4 tablespoons red chilli flacks
  • 1 tablespoon Hing/asafetida
  • Salt
  • 1 cup mustard oil
  • 1 teaspoon Turmeric powder
  • ½ teaspoon Onion seed/kala jeera
  • 1 teaspoon fennel seed/sauff

How to make:

Firstly, wash and wipe them with the cloth. Peel outer skin and grate them and keep in a big glass bowl add salt keep aside.

Peel garlic and crush them {I use the chopper to crush}.in a pan dry roast sauff and Kala jeera until fragrant. Cool and make a powder keep aside.

Heat oil in a pan once oil is Smokey turn off the heat add garlic stir, then add turmeric powder, hing/ asafetida and  grind spices powder mix and cool when oil is completely cool add grated mango red chili flacks and mix well .transfer into a dry glass jar and keep in the sun for 4-5 days.

Chef tips:

  • While making pickle make sure grater, bowl and jar should be dry and clean.
  • use a dry spoon to take out pickle do not use fingers it may spoil the pickle.
  • Do not use sweet mango.
  • Store in dry place self-life 1 year.
