Wash and peel the raw mangoes.
Cut the flesh into small cubes, discarding the pit.

In a blender or food processor, combine the mango cubes, fresh green chilies (adjust the quantity based on your desired level of spiciness), 1 cup of fresh coriander 1/2 cup of fresh mint leaves, 2-3 garlic cloves, and 1 teaspoon of salt.
Blend until you achieve a smooth, green paste. Taste and adjust the salt and green chilies if needed.
