Broccoli cheddar soup
If you have not tasted broccoli cheddar soup, I must say you are missing out something really love this and if you go panera they serve it with warm crusty bread. I ate once and become a big fan. can have it anytime. I tried making it many times but it did not taste the same so after continuous attempts of trying and changing something every time in the recipe, I finally got close to the original taste.
What we need
4 tablespoon butter
1 medium size onion sliced
3 cup broccoli, chopped into bite size
1 medium size carrot diced in bite size
2 clove garlic
¼ cup flour (all-purpose)
2 cup half-and-half cream (you can use 1 cup milk+1 cup cream)
1 bay leaf
2 cup vegetable stock
¼ tsp freshly ground nutmeg
2 cup sharp cheddar cheese
Salt and pepper
How to make
Heat 1 tablespoon butter in a heavy bottom pan and sauté onion until golden take out and keep aside.
Heat leftover butter on medium heat, add garlic cook until garlic change colour then mix flour. Whisk the flour 2 minutes it will be slightly golden. Add milk and cream or half-and-half whisk until smooth and cook for 3 -4 minutes on medium heat.
Add vegetable stock cook 2 minutes on medium heat then simmer cook 12 minutes then add broccoli, carrot, and cooked onions save some onion for garnishing.
Cook for 20 minutes more on low heat and keep stirring constantly. Turn off heat and take out one cup soup and blend, mix both portions together. Turn on heat on medium heat and cook about 5 minutes more than return to low heat. Now, add cheese mix add salt and pepper, nutmeg and stir. Serve hot with crusty bread.
