Bottle gourd kebab


What we need

2 potato medium size

1 medium size lauki

3 tablespoon paneer (optional)

2 tablespoon oil

For masala

1 tbsp oil

3-4 whole red chilli

1 tsp.Cumin seeds

2 green cardamom

5 cashew nut

2-inch cinnamon stick

½ tsp coriander seeds

½ cup chopped coriander

3 green chilli

½ inch ginger

1 tsp dry mango powder/amchur

½ tsp turmeric

How to make

Peel and grated bottle gourd and potato squeeze out water. steam vegetable for 5 minutes in micro or 10 minutes in a steamer. When the vegetable is done keep aside cool.

Heat oil in a pan add all spices and roast on low heat until spices change colour and aroma start coming.

Grind all roasted spices, coriander leaves, green chilli, ginger salt, mango powder or you can use lemon juice. make a smooth paste you can add ½ tsp water but do not add too much water try to grind without water.

Mix vegetable, paneer if you are using and masala paste salt turmeric mix well (you can use paste as per you taste and keep leftover in the refrigerator and use again).

Take a small portion of the mixture and give a shape of kebab/nuggets and roll on bread crumbs.

Arrange on baking tray and bake in preheated oven at 160c with the fan for 12 minutes and flip and again back for 10 minutes.

Serve hot with salad and green chutney
