 Healthy oats vegetable soup

We eat oats in breakfast but we can have any time when you want to eat light and healthy. Oats soup is very easy and simple to make and it is healthy and tasty option to add fiber in the diet. Light and healthy oats soup is the good option for light dinner.

What we need

1 cup oats
½ onion finely chopped
1 tbsp. green beans finely chopped
1 tbsp. carrot fine choppedoats soup
1 tbsp. green peas
1 tbsp. chopped capsicum
1 tsp. ginger finely chopped
1/3 tsp. minced garlic
1 green chilli finely chopped
¼ tsp black pepper
3 tbsp. soya milk or low-fat milk (optional)
2 cup tomato stock or vegetable stock
1 tsp. olive oil
½ tsp. roasted cumin powder
Fresh Coriander leaves for garnish

Tomato stock

Take 3 cup water in a pan, add 2 medium size chopped tomato cover and boil,  cook on medium heat until tomato becomes soft, press tomatoes with the help of a spoon or use blender when it is cool and Strain, it will look like clear soup. You can make in large quantities and keep in the fridge. And use as you need.

Heat oil in a pan, then adds onion, green chilli, minced garlic and cook until onion becomes brown.
Add all vegetables and fry for 2 minutes, then add oats stir and cook for 2 minutes on medium heat. Add tomato stock, salt and pepper roasted cumin powder and bring to boil.
(if you are using milk add 3 tbsp. soya milk, stir and boil again remove from heat).
light and healthy oats soup are ready.
Garnish with coriander leaves serve hot.
Notes–
If you do not want to make tomato stock, you can use 1 chopped tomato and 2 cups water. will get the tomato in your bite. Adding milk will give a smooth and rich and creamy texture. You can choose any vegetable you like.
