Lauki and sabudana kebab with salad

Lauki -sabudana tikki is a good recipe for fasting for me. love to serve with salad. Lauki and sabudana tikki can be served as a snack.

What we need

2 potatoes medium size

1 medium size lauke/bottle gourd

2 tablespoon chopped coriander

2-3 chopped green chilli

½ teaspoon black pepper powder

¼ teaspoon cumin powder

4 tablespoon Sabudana/sago flour

Oil or ghee for cooking

Salt

Peel and grate bottle gourd and potato squeeze out water. steam vegetable for 5 minutes in micro or 10 minutes in the steamer. When the vegetable is done keep aside cool.

Mix potato, lauki/bottle gourd, coriander, chopped green chilli, salt, black pepper, cumin powder 1 tablespoon Sabudana powder mix well.

Take a small portion of the mixture and give a shape of kebab/nuggets and roll on remaining Sabudana flour.

Heat oil in  a pan put some oil or ghee and spread place kebab and cook until both side golden brown and crispy serve with green chutney and salad.

Mix vegetable fritters /pakora is very popular all time and street food snacks in India.Mix vegetable fritters are often served with chai.

 

  • 1 small potato (peel and grated)
  • 1 in small onion (chopped thin slice
  • 2-3 tbsp. chopped spinach
  • 2 flowerets cauliflower (grated)
  • 1 tbsp. chopped cabbage
  • 3-4 chopped green chilli
  • 1 tsp. chopped ginger
  • 1 tsp. cumin seed
  • 1/8 tsp.turmeric powder
  • 1/2 tsp. red chilli powder
  • 1/2 cup chickpea flour (besan)
  • salt to taste
  1. In a bowl mix, all above ingredients and mix well don’t add water.
  2. For mixing, you need to use your hand .heat oil in the pan when it becomes hot pour spoonful batter in oil and fry till golden brown.
  3. Fry till golden brown colour on medium heat when it is done take out from oil and put on oil absorbing paper or kitchen towel to absorb excess oil.
  4. Serve hot with mint dip and hot Indian tea. pakora taste great with hot Indian  chai /tea.

  6. Note —Heat oil over medium heat for frying. check oil temperature drops few drop of batter in oil if oil is at right temperature batter should float up immediately.

Eggless apple cake is soft and moist !!!

What we need

1 tsp baking powder

1 tsp baking soda

1/4 cup oil

1 cup sugar brown sugar (you can use white sugar)

1/2 cup water

1 tsp cinnamon powder

1 pinch Salt

1 tsp lemon juice

1 big peeled and chopped

1 tablespoon black raisins

How to make

  • Sieve together baking powder, flour, baking soda.
  • Now add chopped apple sugar and mix, add water oil lemon juice and cinnamon powder, salt and raisins mix well
  • pour into greased cake tin.Bake in preheated oven for 40- 45 minutes or till done at 180 degrees.
  • Serve with tea coffee or with vanilla ice cream.

Indian Masala okra

okra/ lady finger /bhindi we all cook in in a different way and always it taste good .okra/ ladyfinger /bhindi is rich in vitamin A,B,C and high in dietary fiber,  low in calories. Stuffed  vegetable gives a different taste , stuffed bhindi/okra with spices and onion is very delicious recipe one of my favorites way to cook and eat bhindi/okra ..Bharwan bhindi goes well with dal rice or parathas. It is a very easy recipe. Indian Masala okra recipe is here

What we need

250-gram okra /bhindi

3 tablespoon besan /chickpea flour

½ teaspoon cumin seed

½ teaspoon dry mango powder or 2 tablespoon lemon juice

1/3 teaspoon red chilli powder

½ teaspoon turmeric powder

1 teaspoon coriander powder

1 teaspoon ginger garlic paste

1 pinches, asafoetida /hing

1 big size onion sliced

Salt to taste

2 tablespoon oil

How to make

  • Wash okra (bhindi) and dry with the cloth. Cut into 2-inch pieces and make a slit for stuffing.
  • For stuffing in a bowl mix besan red chilli powder, mango powder, turmeric powder, coriander powder, ginger garlic paste, salt add a ½ tsp oil and mix well.
    Stuff the okra with stuffing.
  • Heat oil in a pan add cumin seed, asafoetida when cumin started crackle add onion stir and cook for a 1 minutes add okra/bhindi cover and cook on low flame for 6-7 minutes or until done stir occasionally.
    Add leftover masala when okra/bhindi is almost done and cook.
  • Serve hot with Roti/paratha  or as a side dish .

Recipe notes

stuffed bhindi/okra can be cooked without  onion and garlic. only you need to skip those steps.

Tea time  eggless apple cake goes well with coffee or tea It’s something special for me because I tried many times, but it did not turn out well.But I did not give up and finally!!! succeed and  it turns out well.Tea time  eggless apple cake good option for vegan too .

1 big apple peeled and chopped
1 tbsp. black raisins
