Bottle gourd kebab is a delicious tea snack My bottle gourd kebab recipe is here try and enjoy your evening.

What we need

2 potato medium size

1 medium size lauke

3 tablespoon paneer (optional)

2 tablespoon oilimg_5915

For masala

1 tbsp oil

3-4 whole red chilli

1 tsp.Cumin seeds

2 green cardamom

5 cashew nut

2-inch cinnamon stick

½ tsp coriander seeds

½ cup chopped coriander

3 green chilli

½ inch ginger

1 tsp dry mango powder/amchur

½ tsp turmeric

How to make

Peel and grated bottle gourd and potato squeeze out water. steam vegetable for 5 minutes in micro or 10 minutes in a steamer. When the vegetable is done keep aside cool.

Heat oil in a pan add all spices and roast on low heat until spices change colour and aroma start coming.

Grind all roasted spices, coriander leaves, green chilli, ginger salt, mango powder or you can use lemon juice. make a smooth paste you can add ½ tsp water but do not add too much water try to grind without water.

Mix vegetable, paneer if you are using and masala paste salt turmeric mix well (you can use paste as per you taste and keep leftover in the refrigerator and use again).

Take a small portion of the mixture and give a shape of kebab/nuggets and roll on bread crumbs.

Arrange on baking tray and bake in preheated oven at 160c with the fan for 12 minutes and flip and again back for 10 minutes.

Serve hot with salad and green chutney. coriander dip.

Jhal muri  is a popular spicy snack and easy to make.it can make in 10 minutes.

What we need—

1 cup puffed rice (murmura)

3-4 green chilli chopped in small piece

1 small tomato chopped into small pieces

2 tbsp. fresh coriander chopped

1 small onion chopped

1/2 mustard oil

3-4 tbsp. lemon juice

2 tbsp. roasted peanut

salt

How to make–

In a pan, dry roast puffed rice and keep aside.

In a large bowl combine puffed rice, onion chopped tomato, green chilli, fresh coriander, well .mustard oil, lemon juice and mix well. Now add peanut and salt well.

Serve immediately otherwise, it will get soggy.

NOTE–

You can adjust chilli and lemon juice according to your taste bud.

Jackfruit Kebab

Jackfruit Kebab made from raw jackfruit good  for high tea goes well with green chutney.

What we need

250 gm. jackfruit
50 gm. gram dal(Chana dal)soaked
1 onion chopped
2 inch long pieces ginger
1 full garlic
2 small cardamoms,1 clove, 5 ball black pepper
1 tsp. garam masala
2 tbsp. chopped coriander
5-5 chopped green chilli
2-3 tbsp. roasted gram flour ( besan )
1 tbsp. red chilli powder
salt to taste
oil for deep-frying

How to make

Boil gram dal, jackfruit garlic cardamom ,clove black pepper ,with the little water I  use a pressure cooker because it takes less time then pan.when it is done make a paste in the mixie or with the spoon or in a chopper. Now in the jackfruit mixture add finely chopped onion (if you can not chop very fine you can use a grater),grated ginger,green chilli red chilli powder, cumin seed ,salt coriander leaves,garam masala and gram flour mix well and make round flat kebab  shapes .Deep fry in golden brown colourServe  hot with mint dip .https://foodiescooking.wordpress.com/2015/04/10/dips-and-chutneys/

Note-if you don’t want add  calories, of course, you can bake instead of frying .
-If you do not want to feel ginger and cumin in your bite, you can boil with jackfruit and grind.

Mix vegetable fritters(pakora)

what we need

1 small potato(peel and grated)

2 flowerets cauliflower(grated)
1 tbsp. chopped cabbage
3-4 chopped green chilli
1 tsp. chopped ginger
1 tsp. cumin seed
1/8 tsp.turmeric powder
1/2 tsp. red chilli powder
1/2 cup chickpea flour (besan)
salt to taste
oil for frying

How to make

In a bowl mix, all above ingredients and mix well don’t add water . For mixing you need to use your hand .heat oil in the pan when it becomes hot pour spoonful batter in oil and fry till golden brown. when it is done take out from oil and put them on oil absorbing paper or kitchen towel to absorb excess oil. serve hot with mint dip and hot Indian tea  .  pakora taste great with hot Indian tea.https://foodiescooking.wordpress.com/2015/04/20/indian-tea/
Note — Heat oil over medium heat for frying. check oil temperature drops few drop of batter in oil if oil is at right temperature batter should float up immediately.

This is my favorite Thai dish I can eat anytime.

Fried banana

Banana is a rich in Potassium fibre ,B Vitamins, and vitamins C and it gives   quick relief in acidity do not use over ripe  banana.

What we need

4 small ripe banana (if you have normal banana use 2)
1/2 cup rice flour
1/2 cup all-purpose flourIMG_2978

1/4 tsp. sugar
oil for frying

Mix all-purpose flour ,rice flour ,corn flour sugar add water slowly mix well make a smooth batter.
peel banana slice in half and then

slice them in lengthwise .if  you are using mini bananas slice them in lengthwise.
Heat oil in a pan (high heat) dip the banana into batter and fry golden brown.
sprinkle little powder sugar and serve hot or you can  serve with vanilla ice-cream or sprinkle powder sugar.
don’t  use over-ripe bananas for this recipe.

WHAT YOU NEED for 

200 gm. mushroom

1/2 tsp. red chilli powder

1 tbsp.hung curd

1/2 teaspoon ginger garlic paste

salt to taste

1/2 teaspoon mushroom

1tablespoon roasted gram flour

HOW TO MAKE

First clean and wash mushroom cut in tow pieces .In a bowl add mushroom, gram flour (besan) ginger garlic, salt, chili powder mix. well now add bread crumb mix very lightly . the shift in an oven proof dish and bake at 200 degrees for 20 minutes or till mushroom get brown . serve hot with mint or curd dip.

Note—

Mushrooms are rich in vitamins B1, B2,and it has potassium,phosphorus, and iron but they are poor in calcium and vitamin c,it does not contain vitamin E.

Spicy Baked potato

what you need

200 gm. baby potato

1 tbsp. hung curd

1/2 tsp. red chilli powder

1/2 tsp cumin seed

1 whole red chilli

1/2 tsp coriander seed

1/2 tsp. corn flour

salt

First clean potato and  soak in hot water with the pinch of a salt (water should be in boiling temperature) for 10 minutes. Heat a pan and roast cumin seed coriander seed, whole red chilli, when it is done make a powder.

Now take out potato and dry with help of cloth and keep in bowl add curd,red chilli powder,salt and corn flour mix well now add 1/2 roasted spices powder( save 1/2) arrange in wire grill and bake( in my oven I bake for 20 minute ) till it turn brown if in your oven you don’t have wire grill you can take an oven proof dish greased  with 2/3 drop oil and arrange potato and bake it.serve hot with mint dip.baked potato
